You clicked on this recipe, which means you already know this sandwich is going to taste good. Don't be intimidated by the "Fried Onion" part of the name. These are just lightly breaded and fried so it's a relatively quick process. You also have my permission to add carmelized onions, or even raw onions instead for lower effort options. Both will taste delicious.

 

Spicy and Saucy Fried Onion Grilled Cheese Sandwich

Ingredients:

  • 2 Slices of Sourdough Bread

  • 3-4 oz Cheddar Cheese

  • 1-2 oz Swiss Cheese

  • 1 tbsp of Mayonnaise (1 tsp per slice of bread - use on the inside of the sandwich)

  • 1 tbsp of Sriracha or your favorite hot sauce

  • 1/2 of a Yellow Onion Sliced into small strips

  • 1/4 cup of all purpose flour (optional)

  • 2 cups of neutral frying oil (like canola oil)

  • 1 tbsp of Olive Oil for Toasting

  • Salt for seasoning


Instructions:

  1. Start by frying your onions. I like to toss my sliced onion in flour before frying to absorb some of the extra moisture and create a very thin layer of breading. This is optional though, and you can fry the onions unbreaded.

  2. Heat oil in a large skillet or deep fryer, and fry onion for about 2 to 3 minutes, or until evenly browned. Once you remove the onions from the oil, season them with some salt, and place on a paper towel and set aside while we build the sandwich.

  3. Toast the inside of two pieces of sourdough using olive oil. I typically toast my sandwiches in a pan, but if you have a panini press, you can use that alternatively by stacking the two pieces of bread on top of eachother so the insides are facing outward and then toasting.

  4. While the bread toasts, mix together your mayo and hot sauce in a 1:1 ratio. We will use this new spicy mayo as the sauce on our sandwich.

  5. Once the bread is toasted, add the spicy mayo generously the toasted sides of the bread.

  6. Thinly slice or grate your cheese (smaller pieces melt easier and more evenly), and add it to the sandwich. Depending on your bread size, you may need more or less cheese than recommended. I'd recommend adding half of your cheese to each side of the sandwich so the onions will be surrounded by cheese in the final product.

  7. Add the fried onions, and close the sandwich.

  8. Toast over a low heat, flipping the sandwich periodically to ensure it doesn't burn. Once the cheese is fully melted, and the bread is golden brown, you are ready to enjoy!

I saw this in the comments before it became a Chef Tyler grilled cheese! I have a feeling that this one would pair wonderfully with a sweet potato bisque.
